Jerk chicken is a very common dish in the Caribbean especially in Jamaica. It is traditionally made in a smoker over pimento wood chips and coal. Not everyone owns a smoker, so I have composed a recipe for the everyday home cook to make juicy jerk chicken right in your oven. It is so easy! The recipe for the jerk seasoning can be foundhere.



Wash the chicken pieces with vinegar. Be sure to wash off the vinegar. Wipe the moisture off the chicken pieces using a napkin or cloth. Salt the chicken. Then, throw in the jerk seasoning which can be found here. Give it a stir and let it marinade overnight or even 3-4 hours.









Then, the next thing you want to do is preheat your oven to 335° Fahrenheit. Next, glaze the bottom of a pan on the stove with oil (just enough to brown the chicken on both sides). Heat the oil up and brown both sides of the chicken. This helps lock the seasoning and moisture in while it is baking. Line a baking pan with aluminum foil and lay your chicken down on top of it. Put it in your oven for about 1 hour and 15 minutes. Raise the temperature to 350° Fahrenheit for another 15 minutes.

Take it out of the oven and allow it to cool for 10-15 minutes. See I told you it was easy! Plate & serve. Enjoy!
